I wanted to ask if there is anyone here that is a vegetarian, and if you could recommend some good resources on becoming a vegetarian. I don't know that I will become a vegan, but I want to change over to a mostly vegetarian diet.....at least to start with. I would appreciate any help, info, or opinions on this. If you are looking for cookbooks, I can recommend anything by Deborah Madison, Molly Katzen...they have great cookbooks that deal with whole foods. You can also to one of the vegetarian magazines, either Veggie Life (very good source of recipes) or Vegetarian Times. Both have articles on nutritional information, recipes and things that may be of interest to you. www.vegweb.com is an excellent website that has tons of information about vegetarian living as well. I am NOT vegan, however....I would have a hard time converting to life without cheese and eggs. Just my personal preference. My recommendation to you is...if you're nervous or worried about it, DON'T try to go " cold turkey " (haha....) - do it somewhat gradually. As with any dietary or lifestyle change, to do it thoroughly takes time! Be gentle with yourself and allow your body and habits to change. Try eating vegetarian for 1 meal a day, then 2, and so on. Or maybe have vegetarian " days " - one a week, then two a week, and so on. Fresh, luscious, locally-produced foods are most helpful (I refuse to eat crappy iceburg lettuce/carrot/cabbage store salads when I can get beautiful spinach/goat cheese/apple salad fixins at the local farmer's markets, for example!) so search out your local natural foods stores and farmer's markets.
