Recipes, groups etc. for making hard candy???

I bought my very first starters kit for making hard candy (with

sugar, " fruit sugar " and water - or just water, glycos and sugar) and

have now made 4 different batches - wow it's fun! But jeeeezzz, my

poor sensitive hands have a real problem handling that warm candy

mass, even wearing dishgloves ;-)

I made; strawberry, tuttifrutti and vanilla, apple and salt licorise

(sp??) and my boys (mostly John cause he's got a real sweet toth LOL)

declared them more than good.

 

Duly inspired, I started to investigate the net here in Sweden to try

to find any recipes containing natural flavours - but no such luck. I

did find a company (other than Panduro for Nordic readers LOL) but

most of their flavorings was NI, not N. Then the thought struck me -

som eof my EOs (like spices, citruses, vanilla, coffee etc) could

probably be used to flavorise candy - but since I have absolutely no

experience in using them in cooking, I want to find some guidelines

before I go ahead. So - if anyone have any ideas, recipes - or maybee

even knows about some all-natural-candymaking , just tell

me and I will be out in the kitchen experimenting faster than

lightning ;-D

I 've made cough drops with herbal infusions and added mint EO to it...

However, one drop goes a loooong, loooong way :)

I've also used a drop of oregano EO, as well as rosemary EO and Thyme

EO in cooking.

If I had one written down, I would send it to you..:)

Basically , I use the normal ratio of liquid to sugar and bring it to

the hard candy stage.

Instead of just liquid I use herbal infusions of: ( herbs in

proportions as they are listed)

elderberry

hyssop

sage

thyme

lemon peel ( organic)

wild cherry bark ( Set in cold water)

boneset

red birch bark

Also, add some honey and a drop of mint EO..*

when I have my liquids, I add the sweetening and boil it to hard stage..

It's great to have a marble slap to pour the candy on, than break it

into small pieces and store them in an airtight container in layers,

with saran wrap in between.

Or wrap individual pieces.

* As with all Eo's that are taking internally, I use much care from

where I get it.

Always can trust Butch, Marge, Roseanne and some other sources from our

list.

Hi Ylva,

 

To make candies I've used the following oils: various citrus oils

including lemon & orange, rose otto, peppermint, spearmint ...

BTW - I have to adjust one thing on the chocolate rose gel candies

recipe variation on page 7, if you make it, don't increase the water by

3 Tbsp as instructed on that page, only add 1 additional Tbsp!
