Guest guest Posted August 5, 2004 Report Share Posted August 5, 2004 Hi Folks: Okra is an acquired taste to some, delish to others. Some ways to use it are: Gumbo: Helps to make stew thick and rich. Lovely! Hubby will eat it that way and he's from the Windy City burbs. Nice addition to most thick type stews. Fried: Hmmmm... you can use any mixture that you like as a coating, here are a few: Flour only Flour and Bread crumbs mixed Flour and Cornmeal in a 30% 70% mix~70 is the corn meal and the preferred way of lots of Southerners. Cornmeal only: Yellow or white~take your pick. Cornmeal and breadcrumb mix Just slice your okra in a small enough slice to brown nicely and then dredge in mix [be sure to get rid of any excess coating] and fry in pan with oil of choice. You will need to keep adding oil as it browns. Note: okra is a bit slimy, but works great with coatings adhering to it. Those with discriminating taste might prefer Succotash: This is just a mix of whatever fresh veggies on hand: Most include squash, okra, tomato is a must, fresh legume of choice[optional], lots of folks use green limas, can't stand them myself..., onion, garlic, corn is lovely in it, etc, etc. Slight EVO oil to get everything going, and spices to taste, add to pan as to which needs the longest to cook, and it makes a great side dish. Be careful tho, it's very easy to get more than you have room for in the pan. <grin> If I were making succotash, I would tend to add a nice white balsamic vinegar to it, or a dash of Raspberry vinegar, or Thyme Vinegar, or.....you get the picture.
