This is great to use as a marinade or with a bit of oil for a salad

dressing, with sparkling water for spritzers or added to iced tea.

Strawberry Mint Syrup

 

makes about 1 1/2 cups.

 

Ingredients

 

2/3 cup sugar

1 1/2 cup dry white wine

2 lemons' zest

2 Tbsp. lemon juice

1 cup pureed ripe strawberries

3 Tbsp finely chopped fresh spearmint leaves

(mint can be pureed with the strawberries)

 

Instructions

 

In a small saucepan, combine the sugar, wine, lemon zest and lemon juice

and bring to a boil. Stir in strawberries and herbs and reduce to a

light syrup consistency

over medium heat. Strain if desired and store refrigerated..
