And a really great change to all tabouleh recipes is

to trade out the bulgar and add Quinoa instead.

Quinoa is one of the ancient grains of South America

for those not familar. One unusual thing about quinoa

is its very high protein content. I think it's the

highest protein grain commercially available. People

that are sensitive to wheat, or those looking for

additional protein might especially like this change.

Also in my opinion, it's somehow lighter in energy for

the hotter summer days.
