And I expect lots of folks know this but I'll throw it out anyway. Within hours of being harvested vegetables begin to lose nutritional value .. in a day or two they have lost much .. and the markets can keep them looking fresh for a couple of days even though they are not fresh. Vegetables that are harvested and quickly frozen have more nutritional value than do most we get in a so-called fresh state from markets. I always raised vegetable gardens when I live in the States .. last one was in Conyers, outside Atlanta. Had a big one .. had over 40 different vegetables .. some that were not even supposed to do well in the area. Saturday morning routine was for me to harvest and take them into the house where my ex had water prepared for blanching and then cooling and immediate freezing.
