The crust recipe I used was : 4 cups all purpose flour 2/3 cup butter 2/3 cup VCO (chilled, solid) pinch salt 2 tablespoon sugar ice water as needed to form dough regular pie dough instruction apply, cut the solids in etc. While rolling I noticed that the raw dough was a bit more " brittle " - meaning it broke easily, but not unmanageably so. Alas! The cooked pie crust is NOT as flaky as the lard crust - HOWEVER, it is one TASTY crust! I think the coconut and butter really complement each other, and certainly compliment the strawberries. It also make for crispness, and a tender inside. And it has NO lard. My MIL just doesn't understand my aversion to using lard. :-P So, it looks like I have one more reason to buy all that VCdC in the co-op! LOL!!! Happy Baking!
