baking pies with VCO? - Chris?

Anyone ever try to bake something like a pie crust with VCO? I know

crisco and lard make nice flaky crusts, but I just _can't_ bring

myself to use them. :/

 

I found some gorgeous strawberries at the Songtan open air market and

I want to make a pie. I thought using VCO and butter in a crust might

be tasty - any thoughts or ideas?

 

And how were the muffins Chris? I think I'll have plenty strawberries

left over. :)

Ya now I haven't tried making a pie crust with the VCO yet? I've made

all butter pie crusts and pie crust with canola oil a long time ago, and

I know that one can use Palm oil just like shortening .... but haven't

tried the VCO yet (now I have a whole buncha apples here, might have to

give it a go this weekend!)

They came out great. They're not a super sweet muffin (I prefer it not

super sweet for breakfast), so if you want sweeter muffins, add more

sugar to the recipe (or some honey or maple syrup even). I was going to

have one this morning, but I tied the last 2 up in a plastic bag and

between them being so moist and it begin so moist here it went icky

already *sigh* .. so I have more muffin making to do this weekend. I

think this time we're going to do strawberry with banana ...
