Guest guest Posted May 27, 2004 Report Share Posted May 27, 2004 Organic strawberries are in the stores near us now, and due to the insistence of my 4 yr old , who is also the chef's assistant .. this is what I have in the oven baking right this moment ... Strawberry Muffins Ingredients: 1 cup all-purpose unbleached flour 1 cup whole wheat flour 1/2 cup Sucanat (or you can use plain sugar or brown sugar) 1 & 1/2 teaspoons baking soda 2 eggs (free range preferably) 1 cup plain yogurt (organic preferably) 1/4 cup Virgin Coconut Oil- melted (or you can use butter) 2 teaspoons pure vanilla extract 1 & 1/2 cups chopped strawberries (organic preferably) Directions: Preheat oven to 375°F. Grease a 6 large muffin tin with butter or Virgin Coconut Oil. In a large bowl, sift together flour, Sucanat (or sugar) and baking soda. In another bowl, stir together eggs, yogurt, melted coconut oil (or butter) and vanilla until blended. Toss the strawberries in with the flour mixture. Pour the egg mixture into the flour mixture and stir until the flour is just moistened. The batter will be lumpy. Spoon the batter into the muffin cups. Bake for 20 - 25 minutes, or until the tops are golden brown. Dust with cinnamon sugar while still hot.
