Guest guest Posted May 18, 2004 Report Share Posted May 18, 2004 Since we were talking about dandelion greens and how to use those bitter but good for you leaves in food, I'll let y'all know what I did with them last night, even the kids who are 4 yrs old and 14 months old liked it! First I sautéed in olive oil an onion that I sliced thinly. Then I added 2 chicken leg quarters (free range of course to the pan and browned them lightly. At that point I added some white wine and water to the pan to braise them. Then I added a large carrot sliced into thin rounds, 1 large chopped fresh tomato and some parsley and I covered it all and cooked it on a low simmer. When the chicken was just about fully cooked I added about 1/2 - 3/4 cup or so chopped dandelion greens, 1 & 1/2 cup chopped mizuna, more chopped parsley, chopped garlic chives, about 1 tbsp dried tarragon and covered the pan until all the greens were wilted. Then I removed the chicken and added a little bit of cornstarch to the pan to thicken the sauce. Then I served it all over basmati rice. It was yummy.
