Dandelion Greens - What I Did With Mine Last Night

Since we were talking about dandelion greens and how to use those bitter

but good for you leaves in food, I'll let y'all know what I did with

them last night, even the kids who are 4 yrs old and 14 months old liked

it!

 

First I sautéed in olive oil an onion that I sliced thinly. Then I added

2 chicken leg quarters (free range of course ;) to the pan and browned

them lightly. At that point I added some white wine and water to the pan

to braise them. Then I added a large carrot sliced into thin rounds, 1

large chopped fresh tomato and some parsley and I covered it all and

cooked it on a low simmer. When the chicken was just about fully cooked

I added about 1/2 - 3/4 cup or so chopped dandelion greens, 1 & 1/2 cup

chopped mizuna, more chopped parsley, chopped garlic chives, about 1

tbsp dried tarragon and covered the pan until all the greens were

wilted. Then I removed the chicken and added a little bit of cornstarch

to the pan to thicken the sauce. Then I served it all over basmati rice.

It was yummy. So, there ya have it, another idea on how to use those

dandelion greens.
