My backyard is full of sweet woodruff.. ( asperula oderata )

I love this plant.

When I first came to the US and someone introduced me to sweet grass ,

I thought.. " I remember that scent "

The delight of my youth, a jellow type of pudding reserved for

birthdays , scented with that smell..

It's sweet woodruff, same scent with sweet white clover.

It's the coumarin that gives it the scent.

Coumarin is a bloodthinner, so this plant has to be used wisely.

However, in May, all Germany is abuzz making Mai wine, which is made

with sweet woodruff.

Basically, you take a bundle of Sweet woodruff ( preferably before it

blooms)

A bundle would be the same as a bundle of parsley you might find at the

supermarket.

Sprinkle a little sugar over it and than some white dry wine.

Just enough to cover the green.

Let steep overnight.

Next day strain the herbs out and add the rest of the bottle of wine

with a bottle of Seltzer water.

Some people add Champagne...

That's what we call a Maybowle.

I am also going to make a *syrup with it, so I can use this delightful

scented brew later in the year...:)

It also makes a great sachet for closets...:)

* I will infuse and infuse some Sweet woodruff in Vodka, until it has

taken on the scent.

Than make a syrup of 1 part water, 1/2 part sugar and add it to the

strained sweet woodruff tincture.:)
