Burdock- green from boiling?

Can someone give me more info on what

burdock looks like and how to prepare it. We consider burdock a weed here as it

grows so prolifically (sp?). We are using weed kill to control it. I am also

wondering whether the burdock we have here is the same as what you can eat. Does

it have a flower head when it matures?

The burdock i get is at the Asian grocery store down the street. The roots are LONG, they look like a possum tail! The burdock i've seen growing along the streams here in CO is a large leaf, low to the ground... but i haven't seen the root. Not sure if there are different species, but the Burdock i've used at the asian mart has really been helping keep my skin free from acne. It's used to treat many skin conditions, and it's also a liver tonic. I think that's great that you have so much around you- don't kill it! :)

It's in many of the natural face products that i use, but i also boil it and make a tea out of it almost every morning. I've noticed a difference.
