We consider burdock a weed here as it grows so prolifically (sp?). We are using weed kill to control it. I am also wondering whether the burdock we have here is the same as what you can eat. Does it have a flower head when it matures? The burdock i've seen growing along the streams here in CO is a large leaf, low to the ground... but i haven't seen the root. Not sure if there are different species, but the Burdock i've used at the asian mart has really been helping keep my skin free from acne. It's used to treat many skin conditions, and it's also a liver tonic. I think that's great that you have so much around you- don't kill it!
