Guest guest
OK, Debbie, and whoever else wanted the Lion/Let Jam recipe, I found it! We'll have to do some substitution for the sugar I guess, honey maybe? I haven't made this in three years and we still have two little jars left from then! Course' we made about 100 of them to give away, etc. Here it is: Lion/Let Jam 3 cups dandelion flowers 3 cups wild Violet flowers(NOT the houseplant type Violet-poisionous!) 2 limes 5 cups sugar (or the honey equivalent) 2 pkgs. (1 3/4oz.ea.) powdered pectin 3 cups distilled water, divided in two. Rinse blossoms and put in blender with 1 1/2 cups distilled water and juice from the limes. Blend well. Slowly add sugar(or honey) till' a smooth paste forms. In saucepan combine 1 1/2 cups distilled water and both pectins. Bring to a boil and boil 1 minute. Add to blender(carefully!) and blend 1 minute. Pour into hot, sterilized 3 to 6 ounce jars and can(water bath method) 15 min. to seal. Label and store. Enjoy.
