Guest guest Posted April 19, 2006 Report Share Posted April 19, 2006 Hi all, I just wanted to remind everyone about picking and eating all those beautiful dandelions growing all over the place right now! Start picking the bright yellow tops and the leaves for salads. They taste great! We can't go past a dandelion with a bright yellow top without eating it! That and at least three or four of the leaves. They're also good in sandwiches, torn up into meatloaf, whatever you'd use lettuce or spinach for. In areas where they may be sprayed, be sure to wash them off. Don't worry about killing it or eating too much of one plant, you won't hurt it, it'll just grow right back. If you have a lot of them dig down and get the root, dry it and grind up for your own tinctures. We also dry and tincture the leaves too! Ground roots can also be used to make coffee, although I've never tried that yet. The bitterness of the leaves tells you this is good for your liver! Somewhere around here I have a recipe I worked up years ago for Lion/Let Jam. Dandelion and wild Blue Violets mixed up and made into jam. I'll have to get busy and find it again,it's really good.
