Juicing and freezing

Hi All;

 

I have done a search in the message archives and couldn't find the answer to

this question...

 

I am juicing organic fruits and vegetables for my children. One of my kids

hates the juice but will tolerate it if I make it into a popsicle.

 

I know freshly juiced produce should be consumed immediately for maximum benefit

(enzymes, vitamin and mineral content), but does anyone know if the juice

retains any of this goodness if I freeze it?

Fresh is obviously always best, but freezing isn't bad.

 

Heating would be the worst thing obviously since it can change the

structure of enzymes and some heat sensitive vitamins (esp. Vit C and B-

complex) rendering them useless. But freezing tends to lock those in,

although over the long term I believe they will degrade like anything

else.

 

What a great idea though to get juice into kids in a fun form - I think

if you're juicing then freezing and then serving it within a week or

two that is far far better than nothing at all!

Hi All;

 

Thanks to all for your replies to my post! I will soldier on with my frozen

homemade juice popsicles with hopes my daughter will eek a good portion of the

healing nutrients.
