I am juicing organic fruits and vegetables for my children. One of my kids hates the juice but will tolerate it if I make it into a popsicle. I know freshly juiced produce should be consumed immediately for maximum benefit (enzymes, vitamin and mineral content), but does anyone know if the juice retains any of this goodness if I freeze it? Heating would be the worst thing obviously since it can change the structure of enzymes and some heat sensitive vitamins (esp. Vit C and B- complex) rendering them useless. But freezing tends to lock those in, although over the long term I believe they will degrade like anything else. What a great idea though to get juice into kids in a fun form - I think if you're juicing then freezing and then serving it within a week or two that is far far better than nothing at all! I will soldier on with my frozen homemade juice popsicles with hopes my daughter will eek a good portion of the healing nutrients.
