Today's Metabolic Minute from Jim LaValle: Digestive Enzymes Digestive enzymes break down food and are grouped into several categories. Proteases (or proteolytic enzymes) specifically catabolize (or to break down) proteins, lipases aid in breaking down fat, and amylases break down carbohydrates. Without these enzymes, which are secreted by the salivary glands and the pancreas, digestion of food and absorption of nutrients would be impossible. A research study in the early 1990s concluded that more than 20 million Americans suffer from digestive disorders. Many of these disorders may be rooted in insufficient digestive enzymes. Food-Based Enzymes Food-based enzymes are those that occur naturally in raw foods. They support the digestive process by removing some of the burden on digestive enzymes. Examples are papain (from papaya) and bromelain (from pineapple), among others. Raw foods contain naturally occurring enzymes that are destroyed by heat and processing. Since the modern Western diet is comprised primarily of cooked foods, we lack the intake of food enzymes that nature intended.
