Guest guest Posted March 7, 2008 Report Share Posted March 7, 2008 I have finally perfected this recipe! Our pancakes used to be flat as a pancake! Now they are delicious and fluffy!!! Even my hubby likes them! 1 c brown rice flour 1 c tapioca starch flour 2 tbsp sugar 4 tsp baking powder 2 eggs 1 c water 2 tbsp oil plus oil to grease the pan each time 1/2 tsp salt 1 tsp vinegar 1 1/2 tsp guar gum or xanthan gum (I use guar in this recipe b/c it is cheaper) Makes about 6 med-lg pancakes. Mix the dry and the wet in separate bowls- Add the dry to the wet gradually and stir it in. I do these in my cast iron fry pan on med heat (#5) As the pan heats up it holds the heat so on the next round of pancakes I turn it down to #4. Enjoy!
