If you differentiate between Organic and Certified Organic you won't have to be concerned about that .. there is no certification document for Organic. I raised Organic veggies gardens most of the years I lived in the USA .. and I know a couple of farmers (1 in GA and 1 in KY) that raise organic veggies and sell them at farmer's markets .. but they don't claim they are Certified Organic .. a different animal that is. Not much different than claiming a bird dawg is full-blooded versus claiming one is pedigreed or AKC registered if its not. Its all about truth in labeling .. and its more a matter of ethics than it is law. As long as you list the legend of the classifications on the same page as the products the buyers can see what they mean .. in fact, they must look at the legends to see the meaning anyway. On the subject of pesticides making it through distillation .. I saw Janina Sorenson's post some years ago .. the one Marge posted .. and back then I had problems with it as it conflicted with other info I was getting from some pretty smart cookies. There might be more to it than appears in that test .. just not sure what it is now .. but I'm trying to find out. Procedures and parameters are important .. and what they tested and how is important .. maybe. Like I said, its contrary to the basics of distillation and to what I have been told by some professors. I doubt if you can find a commercial water distillation (purification) unit for sale that doesn't clearly state that it removes pesticides and explains how it does it.
