When pouring through that list of scone recipes I posted a while ago, I thought I'd adapt one to be fragrant. I did, and it's really yummy. Thought I'd share. I also thought I'd point out that these go really, really well with a ceylon or darjeeling, but are EXCEPTIONAL with Rose Congou - a black, rose scented tea. Available at http://uptontea.com/. I'm not affiliated with them, but I get all my tea there and I can tell you they have an enormous variety (organics too,) as well as superb CS. Rose Raisin Scones: 2 cups all purpose flour (try to avoid using high-protein bread flour, it will make for a tougher scone) or 1.5 cups flour and 1/4 cup whole wheat flour 1 stick butter (next time, I want to try using 1/2 EVOC, but am afraid the egg needs to bind with the dairy proteins - will experiment and repost later) 1 large egg 4 tbsp sugar 2 tbsp rose hydrosol 2 tbsp half and half 2 TSP baking powder 1/2 cup raisins 1-2 drop rose otto 1 pinch salt (note: I try to use organic butter, cream flour etc.) Mix dry ingredients in one bowl, and wet in another. Blend together just until all ingredients are mixed. (over beating will cause toughness) Remove from bowl and shape into round ball. Flatten with the heel of your hand to make a large flat disc. Cut into wedges. If you are a fancy person, brush with milk and sprinkle with demerara sugar. Bake 15 min at 400F *BUT* Check often as my oven is wacky, and not normal by any other oven standards. Remove and cool on rack. Make pot of tea and enjoy!! I serve tea in mismatched vintage tea cups and mini-rose scones would fit into the theme. While searching for other rose goodies one day, I found a couple of Chris's. Imagine my surprise. I made the rose cake and ate nearly all of it myself!! LOL! What's Lifeboat tea? I wanted to do a rose wedding cake for my wedding last June, but opted for baklava instead. One of these days I'm going to make Chris's baklava recipe too - it's just sounds soooo good. I'm dying to try to the rose cake recipe in those super-cute rose shaped bundt pans - wouldn't that be adorable? The scones came out really well, and are just subtly rosy - not overwhelming.
