Do you have the cookbook: " Terrific Pacific Cookbook " ? There are some great

recipes with lemongrass. I can send you some recipes from it. I make Chicken

in Aromatic Coconut Broth. I can buy lemon grass here but if you don't get

any takers I'll have some.

No, I haven't seen the cookbook. A couple recipes might be nice - thank

you.

 

I had lots of takers. If I find I have more left I'll gladly send you some.

Well, I can scan some recipes and send it to you privately but here is one

I've made several times. Living near Berkeley, the esoteric items are

available.

Chicken in aromatic coconut broth

1/4 cup chopped peeled fresh or frozen galangal (substitute 2 T ginger is not

available)

1/4 c. chopped cilantro roots or stems

2 serrano chiles, seeded, stemmed, and chopped

1/2 t freshly ground white pepper

3 stalks of fresh lemongrass (3 inches of the lower stalk,discard tough outer

leaves) chopped

2 T chopped garlic

3 T chopped red onion

4 cups unsweetened coconut milk

2 cups chicken stock or canned broth

8 ounces skinless boneless chicken breasts, cut into strips

5 T fresh lime juice

3 T Asian fish sauce

2 cayenne or serrano chiles, stemmed, seeded and sliced

5 kaffir lime leaves , if available, shredded)

Salt to taste.

1/4 cup cilantro leaves for garnish

1/4 cup red pepper strips for garnish

 

1. In a food processor, combine the galangal, cilantro roots, chilies,

pepper, lemongrass, garlic and onion and process to a paste, adding a little

water

to assist blending. Scrape into a small bowl.

2. Combine half of the galangal paste with 3 cups of coconut milk in a

medium sized saucepan and bring to a boil over medium heat Cook 10 minutes.

Strain through a strainer into a large heave pot pressing the solids with the

back

of a spoon to extract the liquids.

3. Return the soup to the heat, add the remaining coconut milk and the stock

and bring to a simmer. Add he rest of the galngal paste and the chicken and

simmer until the chicken is cooked, about 7 minutes.

4. Stir in the lime juice, fish sauce, chiles and kaffir lime leaves Season

with salt Heat one minute. Serve garnished with the cilantro and red bell

pepper strips.

 

After all of this, I bet you won't make it.
