Guest guest Posted December 24, 2003 Report Share Posted December 24, 2003 Elderberry Medicinal Syrup By Diana of Dewberry Hill I am adapting a recipe I found, by using raw elderberry juice and fresh ginger juice, because I think it is much more medicinal and nutritious than by cooking the berries or using powdered ginger. So I will first list ingredients then go into detail on how to manually extract the precious fresh juice from the berries. This is a very tasty recipe and can be used as a tonic or as a cough syrup. Keep out of reach of children, due to potency and alcohol content. Double or triple the recipe if you have the berries. Ingredients: 3 cups ripe (blue/black) elderberries 1/6 cup raw honey (or TBS equivalent) 1/3 tsp. ginger juice (fresh squeezed) 1/8 tsp. cinnamon powder 1 tsp. lime juice (fresh squeezed) 1 cup quality vodka Equipment: latex gloves (prevent elderberry Juice from staining hands and wear old clothes (elderberries can be used as a dye and will stain whatever they come in contact with.) cheesecloth, glass or ceramic cereal bowl (or slightly larger), rubber band, wooden or plastic spoon, funnel Nice bottle with label - Cover a glass measure cup with cheesecloth…secure with rubber band. This will catch any stray berries. - Spread a separate piece of cheesecloth (about the same size) and put several tablespoons of berries in at a time. Holding over the bowl, squeeze hard and mash berries inside with your fingers and your hand until berries are fairly dry. - Repeat (emptying all berry skins in a separate bowl for later use as a tincture) - Stir honey into berry juice with a wooden spoon (thin end for this small recipe) or plastic spoon - Peel and shred a piece of ginger on the fine shred of the grater, then press it through a garlic press held over a glass to catch the juice (be sure to gather the ginger from the back of the grater where the juiciest ginger collects) - Add cinnamon, ginger juice, lime juice, vodka and stir with same utensil as above. (No metal. And the large end of the wooden spoon soaks up too much berry juice.) Bottle in a pretty bottle (I used an empty Everclear bottle). Use a funnel so you don’t spill any. Make a pretty computer label for you bottle so everyone knows what it is and how to use it. Keep refrigerated and shake before using. Should keep a year in the refrigerator. Adults use a tablespoonful or two, depending on your need. Again, Keep out of reach of children. For a children’s syrup, substitute pure vegetable glycerin instead of vodka, although I don’t think the small amount of alcohol in a TBS would hurt them…ask your doctor.
