These cookies are decadently buttery - and this recipe makes quite a lot of cookies, it can be halved (or doubled). *Smile* Chris (list mom) http://www.alittleolfactory.com <http://www.alittleolfactory.com/> Citrus Zest Cookies 1 pound unsalted butter 3/4 cup sugar 1 tablespoon grated or minced, fresh lemon zest 1 tablespoon grated or minced, fresh orange zest 2 drops organic orange cold pressed essential oil 2 drops organic lemon cold pressed essential oil 1 tablespoon Grand Marnier liqueur 1 cup all-purpose flour pinch of salt Cream together butter and sugar in an automatic mixer, on slow speed for 2 minutes. (Or with a hand-held mixer for at least 3 minutes.) Scrape down the sides and beat on high for an additional 3 minutes or until the batter is light and fluffy, almost a whipped cream consistency. (For 4 minutes if with a hand-held mixer.) Add lemon zest, orange zest, orange oil, lemon oil, and Grand Marnier. Beat on high for about 30 seconds. Add flour and salt and beat for an additional minute. Divide dough in half, wrapping each dough half in plastic and rolling on a flat surface into a long cylinder about 8 inches long by 1 3/4 inches in diameter. (This was the trickiest part of the whole process.) Refrigerate for 2 hours. Preheat oven to 325 degrees. Remove dough from refrigerator and cut into 1/2 inch thick slices.
