I love being here on the gulf coast - mmm - crawfish .. * 1 lb. crawfish tails, boiled and peeled * 1/2 stick of butter * 1 tbsp olive oil * 1 bunch green onions, chopped (tops, too) * 5 large cloves garlic, chopped (to your taste) * 1/2 pint heavy cream * splash of white wine * 1 tbsp sea salt * 1 tsp dill weed * 1/2 lb. cooked pasta (fusilli is what I used) Melt the butter and olive oil in a large skillet over medium heat and sauté onions and garlic for 3 minutes. Add the crawfish meat and sauté for 2 minutes. Add the heavy cream, white wine, salt. Cook for 5 - 10 minutes over medium heat until the sauce thickens. Add dill weed. Add the pasta and toss well.
