Yummy! In Turkey baklava is made with pistachios instead of the common

walnut baklava you see here. And the syrup is a sugar and rose syrup,

not the kind you see here which is made from honey.

Baklava Ingredients

2 cups pistachio nuts - finely chopped

1/2 cup sugar

1 pound filo dough - thawed

1 pound unsweetened butter - melted

Sugar Syrup Ingredients

4 cups sugar

2 cups water

1 drop lemon juice

2 teaspoons rose hydrosol

Baklava making instruction

Preheat the oven to 300 degrees F. In a medium bowl, combine sugar and

nuts. Brush the bottom of a 14 x 10 inch pan with butter. Place 2 sheets

of filo in the bottom of the pan. Brush generously with butter. Repeat

the process until half of the filo dough is used. Spoon the nut mixture

evenly over the filo layers. Proceed to cover the nut mixture two sheets

of filo. Brush generously with butter. Repeat the process until all of

the filo dough is used up (ending with a brushing of butter). Cut into 3

inch squares. Halve the squares to make 1 1/2 inch triangles. Bake for 1

hour at 300 degrees F. Remove from oven and pour cold syrup over the

baklava. Saturate well.

Sugar Syrup making instruction

While the baklava pastry is baking, make the sugar syrup. Combine sugar,

water, and lemon juice in a saucepan. Boil over medium heat for about 10

to 15 minutes. Add the rose hydrosol and bring it just to a boil and

then quickly remove from heat. refrigerate until cool.
