African Ginger Beer Sub-Saharan Africa This drink is popular in sub-Saharan Africa and especially in Sierra Leone and Ghana. It is made with varying ratios of water to ginger, and many different fruits, including pineapples and guavas, which can be substituted for the citrus in this recipe. This recipe makes a strong concentrate that can be diluted with equal parts water for drinking, but many people like it as strong as this undiluted recipe. • 16 ounces (or a couple of large handfuls) fresh ginger, washed and peeled • 2 quarts boiling water • Juice of 2 limes • 1 stick cinnamon • 1 teaspoon whole cloves • 1 cup sugar, or to taste Grind or pound the ginger to a pulp, and place in a large, ceramic or glass jar. Cover with the boiling water and place the mixture in a warm place. After an hour, strain the liquid through cheesecloth, squeezing the pulp to extract all the flavor. Stir in the lime juice, cinnamon, cloves, and sugar. Let the liquid sit for another hour, in the sun if possible. Strain again through cheesecloth and transfer the ginger beer to another jar and refrigerate.
