NO ONE worried about salmonella from eggs. From raw chicken yes, but not from organic free range (truly free range eatingall the bugs and all they want) eggs. This is true! I raise hens for eggs and we have never had any problem with them. We eat them raw, cooked and nearly every day. I personally believe eggs are one of the healthiest food on earth. They are a complete protein and being raw, have the enzymes necessary to process that protein. They are one of the healthiest foods on the planet. :-) You can even keep them just fine for 2weeks out of the fridge and zero problem. I have stored eggs for 6 months, non-refrigerated, just put them in salt. My wife Valorie and I have stored them for up to six months just hanging in a basket by the cupboard with no ill effects. I've heard of others who've stored them for up to nine months. You see, the standard diet for hens(and for all squeamish quit reading here) is their own wastes. Our dogs love the hens house crunchies too (plus kitty box crunchies!). Also other chicken meat. When we have butchered chickens we give the innards to the hens, they love it and it keeps them healthier. We also give them the rib cages of deer after hunting. This is true. Chickens will eat meat and the dead of their own kind when they can get it. When we had our ranch in New Mexico, the captured moles, rats and mice were thrown to the chickens. A field mouse caught in a chicken coop doesn't stand a chance. We also fed them a quality organic grain and organic corn mix as well which included left over egg shells that didn't make it to my Lemon Egg mixture. They also ate grass and many bugs. Our eggs were nothing short of outstanding, and we ate them raw and cooked (mostly raw). Many people believed hens only eat grains and such, but they really are bug eaters and clean up any and all bug they can catch. I think our hens eat more bugs in the summer than anything else. It has all the amino acids necessary to build a brain, skeletal structure, organs, etc, and if it is RAW it has the enzymes necessary to process that protein. Like spirulina and sprouted grains, it is a perfect food. Raw eggs not only have the enzymes necessary to process the proteins, but are also one of the best sources of lecithin, and assist in producing HDL cholestrol which is the good stuff. ;-) I'm not saying you can't ever eat cooked eggs, I'm just saying that for a health building program, you definitely want RAW! She would break and egg into a glass, add apple cider vinegar, water, a little sea salt and pepper and open up her throat and swallow it whole. That would be her lunch or breakfast. It took me a while to do it, but I did it. At first when taking something that tastes nasty, hold you nose and swallow it. After a while it doesn't taste so bad. Just be brave. If you like eggnog, try making some with some healthy variations. Instead of white sugar, use cane or honey, use raw milk, raw cream, raw eggs. Whip it all together and enjoy.
