Again, thank you for the quick reply! Excalibur, huh? I will do a google search and find out about them and see about getting one. Your answer really helps dh and me decide how we are going to preserve our food. I am actually glad that you said dehydrating--a freezer costs so much to run that anything I can do to cut down on the cost of using one is great. I would much rather dehydrate than freeze or can if that is what would leave the most enzymes intact--and from your answer, I gather that it is! I told dh your answer already and like me, he is excited for us to get started on this! Apples and carrots, here we come!
