We have access to organic fruits and vegetables from a very reputable place in our area at a really good price if we could preserve them or store them long term somehow. I know how to can, but at the same time, canning cooks all of the beneficial enzymes, minerals and vitamins out. I want to get away from canning and do something different. Which would be a better alternative, freezing or dehydrating? If freezing is the better alternative, should I flash freeze? Flash freezing is freezing the produce without blanching it first. If flash freezing, how long would it be safe to store in the freezer? Or could things like apples be stored some other way? How did the old timers store their food? I am needing ideas! Excalibur makes an excellent one. I will do a google search and find out about them and see about getting one. Your answer really helps dh and me decide how we are going to preserve our food. I am actually glad that you said dehydrating--a freezer costs so much to run that anything I can do to cut down on the cost of using one is great. I would much rather dehydrate than freeze or can if that is what would leave the most enzymes intact--and from your answer, I gather that it is!
