>> I will look for pasteurized Eggs....the ones I've been buying

say organic and free range, but NOT pasteurized, which

to me is a word now misleading and misunderstood when

it comes to Eggs.

No, no, I'm sorry, I did not mean to mislead or confuse. The kind of egg

you want to look for is PASTURED, that is, raised on pasture (grass

fields), not pasteurized.

Pasteurization is a heating process used to kill germs in liquids like

milk or cider. A pasteurized egg would be cooked! <grin>

>> I buy Eggs, organic/free range at a premium price, from a well known

" health food " store. Apparently, they aren't at all that they are made

out to be.

They may be, they may not be. What you need to ask is whether the

chickens who laid the eggs are confined to a barn, or whether they are

allowed to roam outside in a pasture (field of grass and plants.)

A good place to find someone near you who raises chickens naturally is

this website: http://www.localharvest.org

It has listings for small farmers who sell directly from the farm gate.

Depending on where you live you could find someone who raises their

birds naturally and buy eggs from them (probably for less than the

health food store!)

pastured, pasturized. What was I thinking.... ;)

the iz is the difference. <g> I'll just have to call

the vendors. I checked a few more brands, not one said

" pastured " . All said " free range " . It may be that

they do not want to confuse the conumer by having them

think the eggs have been cooked.
