As a breeder of purebred poultry (including Ameraucanas), please allow me to be a little picky about this subject, one near and dear to my heart. <smile> There are two kinds of purebred blue egg laying chickens. They are the Araucana, and the Ameraucana. If you click the following link you can find out a lot more about these great breeds: http://www.ameraucana.org/faq.html Be aware that a number of hatcheries sell chicks that they call Ameraucana, but which are actually crosses between Ameraucanas and any number of other breeds, hence the green and pink eggs. They are often referred to as Easter Eggers. Purebred birds lay only a blue egg, often referred to as robin's egg blue. Easter Eggers are great birds, come in a variety of wonderful colors, but are not Ameraucanas. And just for what it's worth, no particular breed of chicken has eggs which are lower in cholesterol than any other. Levels of nutrients in eggs are directly attributable to feed, not breed.
