Recipe: Elder Syrup (for colds)

Elder Syrup

 

Take ½ gallon elderberry juice and put into pan, add a well beaten egg

white. When it boils, skim any froth that rises. To each pint add

1lb sugar, boil until syrupy. Bottle when cool. Use for colds.

Hi Lesley Ann,

 

your recipes sound interesting except for the sugar part. Sugar is not exactly healthy - it would be much better to substitute the sugar with stevia, raw organic honey, or organic maple syrup.

When I was in Sweden a friend of mine and her husband make a syrup from

the Elderberry Flowers. I have lost that recipe. Do you make

something like that? They mixed it with either champagne or giner ale

depending on who was drinking it.
