I also placed this recipe in the recipes section of our group files *Smile* Chris (list mom) http://www.alittleolfactory.com ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Cinnamon Chicken - by Christine Ziegler-Bollum Spice Rub: 2 tsp cinnamon (high oil content preferably) 1 tsp salt (unrefined preferably) 1/2 tsp allspice 1/4 tsp mustard powder 1/8 tsp mace (or nutmeg) 1/8 tsp black or white pepper 1 average chicken (free range preferably) 1/2 - 1 cup apple juice Rub the chicken inside and out with spice rub. Let sit for at least 1-4 hours. Place chicken in a roasting pan. Add apple juice. Roast chicken at 375 for about 1 hr 20 minutes or until a meat thermometer places in the thigh reads 180 degrees F. Be sure to baste your bird every 25 - 30 minutes adding a bit more apple juice if necessary. A gravy can be made with the pan drippings by bringing the drippings to a boil, adding some water or wine, and about 1 to 1 & 1/2 tsp cornstarch and bringing back to a boil, stirring sauce until thick.
