I have also placed this recipe in the recipe section of our group files. *Smile* Chris (list mom) http://www.alittleolfactory.com ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Pumpkin Muffins - by Christine Ziegler-Bollum 3 & 1/2 Cups Flour (organic unbleached all purpose preferably) 1/4 tsp. Salt (unrefined preferably) 1 tsp. Baking Powder 1 tsp. Baking Soda 1 Tbsp. Cinnamon Powder (5% oil content or higher preferably) 1 Tbsp. Vanilla Extract 4 Large Eggs (free range preferably) 1 & 1/2 Cups Sucanat or Brown Sugar 1 Cup Safflower Oil (or other light oil - expeller or cold pressed preferably) 2 Cups Steamed Mashed Pumpkin (this is about one pie pumpkin worth or one large can - organic preferably) 2/3 Cup Raisins (organic preferably) 1 Cup Chopped Walnuts (organic preferably) 1/4 - 1/2 Cup Crystallized Ginger chopped finely (optional - organic preferably) Preheat oven to 350 degrees F. Butter 2 large muffin pans generously and then dust with flour. In a mixing bowl combine wet ingredients - pumpkin, vanilla, eggs, oil and sugar. In another bowl sift together the flour, baking powder, baking soda, cinnamon and salt. Combine the blend of powdered ingredients slowly with the wet ingredients (in about 3 batches). Mix until smooth. Add raisins, nuts and ginger. Stir well. Pour batter into prepared muffin pans, filling each cup about 2/3 full.
