That's because certain varieties provide significant amounts of antioxidants, scientists have discovered. Oregano, sage, peppermint, thyme, lemon balm, clove, allspice, and cinnamon, in that order, were found to contain the highest concentrations. Adding one gram of herb, about half a teaspoon, per day " will double your normal antioxidant intake, " says nutritionist Rune Blumhoff of the University of Oslo in Norway. One quarter ounce of rosemary, he says, contains the same amount of antioxidants as 2 ounces of blueberries or 28 ounces of broccoli. Although herbs contain more antioxidants when fresh, he adds, dried herbs are fairly potent. Scientists are still learning how well the body can process antioxidants and how much protection they truly offer against disease.
