Long before I new of it's antiviral properties, we used this as our summer lemonade. You can strain and refrigerate. Do you drink the strong brew or dilute? -Helen - Helen One doesnot brew Melissa (lemon balm), one steeps it in hot water. When using this method, I heat the water, go out to the garden, cut a ton a lemon balm, place it in a large pot, just barely cover it with the hot water, place a lid on it and let it steep about 30 minutes. The essential oil is very volatile. I also start tincturing it in late May.
