Guest guest Posted April 14, 2003 Report Share Posted April 14, 2003 - Don't know if this would be considered a liquor/cordial or not - but its easy and is just as good: I have taken fresh, ripe raspberries in the summer and really compressed them as tight as possible in a mason jar then covered them with vodka and stored them in the refrigerator for about six weeks. At least once a week I'd shake the jar to keep the berries and vodka mixed. After that, I strain the mix through cheesecloth; squeezing all the liquid from the pulp. Discard the pulp and store the finished " cordial " in the fridge. It is a vibrant red color with a wonderful raspberry flavor. I'm still using some of last summers harvest and especially like to add it to hot and cold teas. Just a little idea! There are lots of recipes but not a lot of folks have put them to the test. I have a damiana cordial aging as I type! Will post results and a recipe if it turns out.
