Absolutely crave the taste, and have a great garlic press. Absolutely everything but sweets gets lots of raw pressed garlic. I don't cook my garlic, but it goes on last, fresh and pressed. Yummmmmn! Or in my fresh juice. Garlic and olive oil are 2 of my favorites...and I'm not even Italian. Use lots of oilve oil, no butter. Break him in a bit at a time. I think a person needs to build up to using great amounts of garlic. Ol' Stinky breath, Diana of Dewberry Hill LMAO ... I'd try it but I know it won't work. Hubby is not a big fan of garlic, and my " potion " has a whole head in it. His first reaction when he smells it cooking is " EWWWWW " . But you know, with a little tweaking of ingredient amounts, it just might might a good salad dressing! You should have seen the look on his face one of the first times he saw me chopping garlic for a recipe. " You're using THAT much garlic?! " LOL Unfortunately, stepson is completely finicky when it comes to seasoning food, so I have to tone it down from my norm. However, I've been slowly increasing the amount of seasonings I use, and what foods I use it in, so he's getting used to it. He'll even eat jarred salsa now with only minor complaints about the ingredients. Haven't tried him with my fresh salsa yet, or my Tex-Mex sauce, which his dad loves. Guest guest Posted April 5, 2003 Report Share Posted April 5, 2003 My kids love my mom's salsa: 2 - 3 medium sized jalapenos 3 large vine ripe straight from the garden tomatoes 2 - 3 cloves garlic 1/2 sweet onion 1/4 tsp cumin salt to taste Boil jalapenos in water until they are cooked (they change color and your whole house smells of them) Add tomatoes, boil just until tomato skins crack and peel, don't over cook Meanwhile, chop onion into big chunks and peel garlic Take jalapenos out and remove stems. Take tomatoes out and cut into quarters. DO NOT THROW OUT WATER YET. Put jalapenos, onions and garlic into the blender. Blend until it's a paste. Add tomatoes and cumin. Blend until you think it's all mixed up well. Taste then salt to taste. Because the peppers, tomatoes, etc. can vary in taste depending on the season and where you get them from I like to add one teaspoon of salt, blend taste and continue in that manner 'til I'm satisfied. If you think the salsa is too 'dry' add a little of the water you used to cook the peppers and tomatoes in. Will keep in the fridge for up to a month - it's very acidic. It's great on just about anything you can think of: bean sandwiches, eggs and sausage bake, baked potatoes, nachos, etc. For a more grown up taste we grill the peppers and tomatoes. I think my kids like it 'cuz it's not chunky so you don't get a mouthful of onion here, mouthful of tomato there.
