cultivating turmeric

As I am cultivating my first turmeric plants, I was wondering a couple of

things.

 

1. Harvesting roots

As the foliage dies back (southern hemisphere fall) and I harvest the roots-

What do I do in preparation to use the roots as culinary medicinal, and also

to store for later use?

 

2. Next planting

Relative to the seasons do I replant in Spring, and until then, where and

how do I store the roots. How much do you have to have to replant?
