But black chickens have black feathers, leaner bodies, black skin and bones, and are considered very nutritious by the Chinese. They are farmed just like other chickens, though on a smaller scale. They are mostly used in medicinal cookery. The Chinese also differentiate yellow chickens, which (as I understand) are normal chickens that are fed exclusively corn. The flesh changes color slightly (more yellow) and they are considered to have a better flavor for certain dishes. There is also a type of chicken in Taiwan known as tu3 ji1 ( " local chicken " ) that is yet another bird, a leaner version of the normal chicken. I asked the folks on a list I use to suppliment my chicken addiction what they thought the black chicken might be. Its not unusual for chickens to have black skin. Silkies can have black skin.
