Guest guest
Hi !< I have been making my own jam, sort of just faked it and its doing well enough and the kids can eat jelly on their rare treat bread along with home made peanutbutter.... The question I have is , what is pectin that you add to the jelly made of? We are avoiding corn ingredients and various chemicals and not sure if corn is in there or not. Sincerely Barb M. Fruits rich in pectin are the peach, apple, currant, and plum. Protopectin, present in unripe fruits, is converted to pectin as the fruit ripens. Pectin forms a colloidal solution in water and gels on cooling. When fruits are cooked with the correct amount of sugar, and when the acidity is optimum and the amount of pectin present is sufficient, jams and jellies can be made. In overripe fruits, the pectin becomes pectic acid, which does not form jelly with sugar solutions. Commercial preparations of pectin are available for jelly making. An indigestible, soluble fiber, pectin is a general intestinal regulator that is used in many medicinal preparations, especially as an antidiarrhea agent. The peels are washed, ground and processed to extract the pectin. The pectin is then refined, vacuum-dried and ground. http://www.kraftfoods.com/surejell/ A couple more links: http://www.gi.alaska.edu/ScienceForum/ASF8/887.html http://en.wikipedia.org/wiki/Pectin http://www.herbstreith-fox.de/en/home.html?gclid=CJ-7ypq09JECFSPNIgod8x-Fog (I think they make Pectin) Hi !< I have been making my own jam, sort of just faked it and its doing well enough and the kids can eat jelly on their rare treat bread along with home made peanutbutter.... Guest guest
Pectin is a soluble fiber from the non-woody parts of plants. It occurs in abundance in apples and oranges. Where they get the pectin you buy at the market I have no idea Hugh B Magnatta <mom.magnatta Sent: Tuesday, March 4, 2008 10:38:01 AM Fruit pectin Hi !< I have been making my own jam, sort of just faked it and its doing well enough and the kids can eat jelly on their rare treat bread along with home made peanutbutter. ... Guest guest
Also, there is a product called Pomona's Universal Pectin which does not take sugar to jell. I used it for years with excellent results. You can add some honey to sweeten if need be. Since thinking of this pectin and rereading your question I realize I read your question too quickly and did not really answer your question. Sorry!
