I took someone's advice earlier and placed the pulp in a pot and sauteed it with some onions and garlic and added it to some organic pasta, and WOW!! I was amazed at how good it tasted with all that natural flavor. So my next step is to take it to this level and create my own cakes, pies, cookies, bread, muffins, etc. using pulp. Guest guest Posted February 1, 2005 Report Share Posted February 1, 2005 Hi - After reading the first post about pulp, I was reading through a new cookbook " Living Cuisine " by Renee Loux Underkoffler - A raw foods (gourmet) cookbook. She has several raw cake recipes using 2-4 cups of carrot pulp. I highly recommend this cookbook because she explains how to dehydrate, sprout, and talks about basic nutrition and raw foods in great detail. Her recipes look wonderful. Just to give you a sample - some of her cake recipes include: Crumble Apple Studel Bundt Cake (this has a cake layer, apple studel layer, crumble top and a vanilla glaze) This recipe uses a lot of ground nuts and coconut for the base - remember this is raw; Traditional Layered Carrot Cake with a Lemon Cream Frosting, Budda Back Mocha Cake, Lemony Poppy Seed Cake with Whipped Lemon Cream Frosting, Heaven Layer Cake with Cherries and Frosting, plus a wide variety of other frostings, cookies, pies, and tortes. All her recipes look wonderful from salads and soups to main course meals. I went on too long here - I haven't had breakfast yet.
