You should be able to grow just about anything you want in containers in Dallas, just make sure the containers are light enough that y ou can bring them inside when it's going to get below freezing. As to what to grow, it depends on what you think you'll use and what you want to use it for. I mostly grow culinary herbs (basil, rosemary, thyme, sage, marjoram, etc.) and if you go that route you'll want to grow things you'll use. You mentioned soaps and rosemary is great for that, also lavender, lemon balm, mint, and you probably have your favorite scents, too. Herbs are cheap, especially if you start them from seeds (though this takes longer) so try a bunch and see what you use and what you like.
