My friend just read something to me from a book on raw foods that Doc recommended to him that says that enzyme enhibitors are destroyed either by soaking or by cooking. Now I know that cooking also destroys enzymes, but sometimes I want to eat cooked grains. All this time I thought that I had to first soak grains (or beans) to destroy the enzyme enhibitors, and then cook them. If cooking destroys them, why would one ever have to soak beans first? You have to cook it for up to 6 hours. :-) Best is to sprout first and then cook. You have to cook it for up to 6 hours. Doc, what about brown rice or other grains that have to simmer for 30- 45 minutes for hot cereal? Is that not enought time to destroy the enzyme inhibitors?
