Raw Lentil Salad Half a large jar Green lentils, sprouted 2 days 1 large handful Parsley, chopped 1 Red Bell Pepper, chopped 1/8 Onion chopped Chives or a little green onion, chopped 1 1/2 Tomatos, chopped About quarter cup Extra Virgin Olive Oil 2 - 3 cloves garlic (or if you like garlic, add more) Juice of 1/2 lemon Apple Cider Vinegar to taste Couple basil leaves or sprig of dill (optional) Kelp powder (optional) Celtic Sea Salt Pepper Pinch ground ginger (optional) Pinch cayenne pepper (optional) (confession... I stole this recipe from a pre-made cooked lentil salad at People's Market, but converted it to raw and expanded on it with the kelp powder, ginger, basil leaves, chives, etc.) Directions: Put sprouted lentils in a big bowl Put red pepper and onion in food chopper, chop until pieces are shredded but not blended and add to lentils. NOTE: the red pepper makes it sweet so you can add more later if it's too tart Put tomatoes in food chopper, chop until small pieces but not totally liquid, then add to liquid. Put parsley, garlic cloves, juice of half lemon, olive oil, dill, basil, chives, kelp, pepper, salt, in food chopper, chop until fine, then put into the salad. I added the apple cider vinegar seperately because you will want to try only a little bit mixed with everything before you add more. Then add extra salt if you want.
