Almond butter - is drying necessary?

Hi,

 

Can I make almond butter without drying the almonds first? I have sprouted

them and really want to make and enjoy this today instead of waiting all

that time. will the recipe come out wrong if i just blend up the almonds

with some olive oil or coconut oil, right after they have sprouted?
