I found this study at http://www.hacres.com . It is called The Effects of Carrot Juice on Blood Glucose Levels and it was done by Dr. Michael Donaldson . It is interesting reading but what is really important for me that I can safely drink my favorite carrot juice and get more yellow and orange. Good luck to you all! Air3d44 Here is the extract from their home page: http://www.hacres.com/diet/research.asp The Effects of Carrot Juice on Blood Glucose Levels Carrot juice is an integral and potent part of The Hallelujah Diet®. With its natural sugar content, questions abound as to the effects of it on blood glucose levels. Likewise, there are questions about whether sugar-sensitive people should refrain from consuming carrot juice, or if they can consume it safely and receive all of its health benefits. Dr. Michael Donaldson of the Hallelujah Acres® Foundation conducted a study to answer these questions about carrot juice, as well as to determine ways to safely lower the blood sugar response to it. The results are quite surprising and eye-opening. You can read the brochure summary of the study here or the full version here. http://www.hacres.com/diet/research/carrot_juice_full.pdf http://www.hacres.com/diet/research/carrot_juice_brochure.pdf JoAnn Guest mrsjo- www.geocities.com/mrsjoguest/Diets
