Interested in fermenting undenatured whey to increase probiotic

bacteria and reduce lactose in the whey at the same time? .....

Five strains of lactic acid bacteria were isolated from naturally

soured milk after enrichment in whey-based medium. One

Lactobacillus casei strain exhibited a remarkable capability to

utilize whey lactose and give a high biomass yield on lactose.
