Gary Null's key point of saturated fat being the prime

arachidonic acid contributor is not supported by what we know

about the arachidonic acid pathway.

 

I recommend a read of the well referenced book Inflammation

Nation by lipids expert Floyd Chilton fo accurate information.

Chilton details precisely how the arachidonic acid pathway is

fueled principally by omega-6 Linoleic Acid, a plant oil.

 

As Chilton points out, vegetarians have a high degree of heart

disease because LA occurs at high values in their fare, and LA

also appears in problematic quantities in meat that is not grass-

fed, leading to the concen about meat. This is why one would take

into account ALL sources when reducing the omega-6 oil in the

diet to what the body requires and not more.

 

Also, the concept of getting adequate EPA and DHA via linolenic

acid LNA from plants is a failure; here's a quote from Dr.

Chilton's book (page 97):

 

" I wish I could tell you that the linolenic acid in flaxseed oil

could replace wild fish as a rich source of EPA and DHA but the

scientific literature simply does not support this contention.

....We do the conversion but very slowly, and we also eat a lot of

fatty acids such as LA that 'compete' for enzymes that convert

ALA to EPA and DHA, further limiting its conversion. "
