Guest guest Posted September 22, 2006 Report Share Posted September 22, 2006 Gary Null's key point of saturated fat being the prime arachidonic acid contributor is not supported by what we know about the arachidonic acid pathway. I recommend a read of the well referenced book Inflammation Nation by lipids expert Floyd Chilton fo accurate information. Chilton details precisely how the arachidonic acid pathway is fueled principally by omega-6 Linoleic Acid, a plant oil. As Chilton points out, vegetarians have a high degree of heart disease because LA occurs at high values in their fare, and LA also appears in problematic quantities in meat that is not grass- fed, leading to the concen about meat. This is why one would take into account ALL sources when reducing the omega-6 oil in the diet to what the body requires and not more. Also, the concept of getting adequate EPA and DHA via linolenic acid LNA from plants is a failure; here's a quote from Dr. Chilton's book (page 97): " I wish I could tell you that the linolenic acid in flaxseed oil could replace wild fish as a rich source of EPA and DHA but the scientific literature simply does not support this contention. ....We do the conversion but very slowly, and we also eat a lot of fatty acids such as LA that 'compete' for enzymes that convert ALA to EPA and DHA, further limiting its conversion.
