It is found in most terrestrial plants and animals that eat those plants. What has happened lately is that corn has been grown in immense quantities and is being fed to our cows, chickens and pigs and is ultimately being saturated through the industrial refining process. Ironically the excess of corn is ruining American health and even causing starvation elsewhere in Mexico. The human brain has a 1:1 ratio of Omega-3 to Omega-6, however, our diet is at least 20:1 in favor of Omega-6. We have been seduced by agribusinesses into eating a single plant (corn) that has been rendered and processed into thousands of foods from corn flakes, starches, sweeteners, resins, glues, meats, dairy products, soft drinks, fruit juices, hydrogenated oils and other items of trans fats. As the price of corn goes down, the farmer must cultivate more acreage at the expense of other crops; therefore, we end up with a monoculture of food because other products are displaced. Add the nitrogen as fertilizer and pesticides that come along with this gift and the soils are depleted and the run off contaminates streams and rivers. Ultimately the excess corn is fed to ruminants and other animals who are used to eating grass. They often get sick, require antibiotics which becomes spread in their flesh and effluent. (pasture fed animals have less saturated fat and more Omega-3 and Omega-6 fatty acids than the items served at fast food chains). Obesity and diabetes are a natural outcome of the outpouring of corn-related products. This corn production has been sponsored by the federal government, paid for by you and me, and is bankrupting the farmer. The Aztecs worship corn but we are making an even greater sacrifice to it. http://www.eyeadvisory.com/archived_tips.cfm?ID=39 & Action=showarticle JoAnn Guest mrsjo- www.geocities.com/mrsjoguest/Diets
